Clove specifications include physical characteristics like dark brown color, a nail shape, and a size of 10-16 mm, along with chemical and quality parameters such as a moisture content of 10-12%, a minimum of 15-20% volatile oil, and being free from foreign matter and infestation. Quality grades can be determined by criteria like hand-picked superior, clean quality, or standard.  

Cinnamon stick specifications include physical characteristics like length (10−4010 minus 4010−40 cm), diameter (up to 202020 mm), and color (reddish-brown to light brown), along with quality parameters such as a maximum moisture content of 10−12 minus 12 −12% and low ash content. Specifications can vary by grade and type (Ceylon vs. Cassia), with Cassia sticks often being thicker and darker, while Ceylon sticks are more delicate.  It's also a little bit lighter in color, looking almost tan, instead of ruddy brown. A quill of any of the Cassia varieties will be thicker.
